With three days off and less of studies to do, I decided to make it my healthiest week so far by baking muffins at home with a healthy recipe and no sugar. When I was browsing online, I saw some key ones with avocado but none without sugar and while pondering over what could possibly be labeled as the healthiest avocado muffins, I came across a recipe that had avocado, banana, green apple, whole wheat flour, plain oats and guess what no sugar. Bingo!

These were special muffins made for kids and rightly enough they were healthy. So I compared the ingredients and picked some stuff that I didn’t have from the closest supermarket. And once the ingredients were in front, something didn’t feel right.. what was missing? A simple thing, the tray to bake. So I started searching online for a substitute and they said you could simply use the cupcake paper moulds which I did see but didn’t think I needed it. Anyways, I thought about the foil, how I could coil it and there it was; my muffin mould. I put small squares into the back of a small cup and just dabbed it to make it bend at the right places. Since the dough was hard, there was no concern of spilling in the process. With this, I baked 8 muffins adding walnuts and raisins in each as decoration and flavour. Twelve to fifteen minutes in the oven and they were ready to be served once they cooled down. I ate two yesterday, one to taste if it was ok and one to eat with my coffee. I must say for someone with a sweet tooth, you can either add brown sugar in the dough or add honey or almond butter while serving as we do for scones.

For those who have acquired the taste with no taste ie., sugar like me, this is perfect for a snack or breakfast on the go or even before a workout. 8 muffins had one banana, one small cup of plain oats, one green apple, one avocado and wholemeal flour, baking powder, baking soda and cinnamon powder sprinkled as a complete dough. Tip.. for the green apple use a scrapper like we do for cheese and squeeze the water out before using the apple.

I hope to keep going with my healthy experiments so I can suggest substitutes at some stage for those who want to eat their usual bites, with a healthy twist. Wish me luck!
